Sometimes a girl just wants to get her bake on.

I'm not normally this domesticated, but after spending a good proportion of two days in the sun I decided to take a break this arvo and whip up a batch of my Mum's 'Melting Moments'. That's what they're known as in New Zealand anyway. Over here in the UK you would probably call them a Yoyo. But trust me, these are HEAPS better!

A bit of lemon, lime and orange equals tangy goodness.... Here's the recipe:

Shortbread cookies

  • 110g butter
  • 2 heaped Tbsp icing sugar
  • 1/2 cup corn flour
  • 1/2 cup plain flour
Cream butter and sifted icing sugar until light. Add sifted flours and mix well. Roll out the shortbread dough however you like - I try to be fancy and always add a criss-cross pattern. Bake at a moderate temperature for about 10 minutes.

Cream filling
  • 25g butter
  • 3 Tbsp icing sugar
  • Grated orange, lemon, lime rind (your preference)
  • 2 tsp orange, lemon, lime juice (your preference)
Beat the above ingredients until light and fluffy, then use to join the shortbread cookies together. Dust with icing sugar.
