Me want cookie! Me eat cookie!

This was the phrase running through my head two weekends ago when I baked these bad boys. My oldest friend is having a baby boy soon (nicknamed 'bubs') and this was my contribution to the baby shower. I loved Sesame Street as a kid, and Cookie Monster was by far my favourite character. Most likely because I loved stuffing my face with cookies too! Times haven't changed too much really.

For my base I made hummingbird bakery chocolate cupcakes. You can find the recipe here...

And to decorate I made vanilla coconut icing, coloured blue, and then added all the extras to make my monster faces. The trick to these cupcakes is all in the decoration - so I'll skip to that part.

Vanilla coconut icing

  • 250g icing sugar
  • 80g unsalted butter, at room temperature
  • 25ml whole milk
  • 3-4 drops vanilla essence
  • 3-4 drops blue food colouring
  • 80g desiccated coconut
Beat the icing sugar and butter together until well mixed. Combine the milk and vanilla essence in a separate bowl and then beat into your butter and icing sugar mixture until light and fluffy. Next add the blue food colouring, one drop at a time until icing is a beautiful blue colour. Lastly mix in coconut to taste.

I then frosted each cupcake twice. This ensures maximum thickness.

To decorate
  • left over coconut
  • chocolate chip cookies, cut in half with a sharp knife
  • sliced white marshmallows (one marshmallow makes approx 3 eyes)
  • milk chocolate drops
Sprinkle your iced cupcakes with left over coconut to make Cookie Monsters famous blue fur. Then gently add your mouth and eyes. I had pre cut all my cookies and marshmallow eyes in advance. I used left over icing to attach the chocolate drops to the marshmallows.

And voilà! Here are my finished cupcakes all ready for the party:
