When the sun is out what do you do? Well in my case last weekend I baked - but it was all for the pleasure of eating baked goods in the sun post sausage and burger at a summer BBQ.
I wanted to make something easy - so decided to try out Jamie Oliver's Jammy Coconut Sponge from my Jamie's Great Britain cookbook.
And it was easy! And delicious! The trick with this recipe is all in the homemade jam topping. I used:
- fresh blackberries (2 punnets)
- about 100 grams of caster sugar
- a squeeze of fresh lime - to give the jam some zing!
