Christmas treat #1 - homemade gingerbread

Gingerbread is one of my favourite Christmas treats, and brings back lots of childhood memories as my mum always made it for my brother and I when we were kids.

My gingerbread recipe is incredibly moist and sticky - with a nice soft crust. And as a bonus - the house always smells amazing and while it's cooking.

This gingerbread recipe is incredibly easy to throw together - but does take about an hour to bake, so make sure you have time before getting started...
  • 175g unsalted butter
  • 200g caster sugar
  • 3 Tbsp golden syrup
  • 250ml milk (I prefer whole over skim)
  • 250g plain flour
  • 1 Tbsp ground ginger
  • 1 tsp ground cinnamon 
  • 1 tsp baking soda
To begin preheat your oven to 180 Celsius and grease your loaf tin.

Next combine the butter, sugar, golden syrup and milk in a saucepan, bring to the boil and then remove from heat and set aside to cool slightly.

Sieve your flour, baking soda, ginger and cinnamon into a large bowl and slowly stir in your boiled mixture until just blended. The mixture will be quite 'wet' looking - don't worry it's meant to be like this.

Finally pour your mixture into your prepared loaf tin, turn down the oven to 160 Celsius and bake for about 1 hour - or until the top of your loaf springs back when lightly touched.
