lazy weekends & homemade parsley pesto

Hubby and I are now well and truly settled into our new London flat - and we are loving all the space (think spare room, roomy kitchen and garden!).

We also have a new Sunday tradition - having a little 'snooze in' and then heading over to Queens Park Farmers Market to do our weekly fruit, vege, meat and 'treats' shop. I am absolutely loving having such a great market close by and our Sundays are feeling super relaxed.

After the market we head home and make something yummy for lunch. A few weekends ago we picked up three boxes of beautiful tangy raspberries for £1.50 and made super-yummy raspberry jam, which we later lathered all over scones.

Last weekend we picked up a whole supermarket bag of fresh parsley (not the leaf parsley, but the type I had growing up in New Zealand) - so we strolled home and whipped up some homemade parsley pesto. It was delicious paired with our fresh walnut bread...

Pesto is very easy to make if you have a bit of time. Here's our easy recipe...

Homemade parsley pesto
  • 3 to 4 big handfuls of freshly chopped parsley (no stalks)
  • 2 garlic cloves, crushed and chopped
  • 40g freshly grated parmesan
  • 30g pine nuts
  • 75ml extra virgin olive oil
  • salt to taste
Chop and mix all the ingredients. Season to taste. That's it! Eat and enjoy.
